Braised Red Cabbage with Apples

Ingredients

900gm red cabbage, shredded

450gm onion, chopped small

450gm cooking apples, peeled, cored and chopped small

3 tbs wine vinegar

3 tbs brown sugar

1 clove garlic, peeled and chopped very small

¼ level tsp ground cinnamon

¼ level tsp grated nutmeg

10gm butter

salt and ground black pepper

Method

Mix the cabbage and apples together along with the spices, sugar, vinegar and garlic and salt and pepper in a casserole and dot the surface with the butter.

Cook covered for about 2.5 hours at 1500C, gas mark 2, till the mix has softened but stir every 20 minutes or so. Check the seasoning before it cools.

Freeze in 200gm portions for two people or proportionally for more.
